Few years ago we decided to use the land that we own and that was not in use for agriculture very long time. In 2010 we planted 250 olive trees on a beautiful piece of land overlooking the sea. There are 7 different olive varieties, a combination of Istrian ones and Italian ones. We expect to have the first olive oil in 2014.
As the people usually use the oil and vinegar together we started an experimental production of balsamic vinegar from two indigenous grape varieties indigenous to Istria, Malvasia Istriana and Teran. The production lasts at least 5 year and we use a method very similar to the traditional method used in Modena. Hopefully we will have the first drops of the balsamic vinegar together with our first olive oils in 2014.
There are two tangerine trees in our garden which are giving us about 100 kilos of tangerines in a good season. Our tangerine marmalade is having quite an big success on Croatian market last 3 years.
There is another tree in our garden, the jujube tree. For many years we saw the jujubes falling down, and we decided to try to make the jujube jam. The taste is very close to the strawberry for those who never tasted the jujubes, but the texture is similar to the chestnuts cream.
